Tony has been in the industry since 1981 and has gained considerable experience during that time. He has run his own catering businesses since 2002. For the past seven years he has been training other chefs to manage the financial side of running a successful kitchen. Kitchen Gross Profits (GPs) of 60-65% are common in the industry and can put a business and its’ cash-flow under unnecessary financial pressure. We specialise in putting systems in place with chefs so your business can achieve a minimum 70% kitchen GP.
We currently offer two day structured courses to suit your business needs focusing on all aspects of kitchen finances. We consider supplier costs, waste, stock control & the accurate pricing of each dish on the menu.
Course prices are quoted on an individual basis to include all travel expenses and accommodation if applicable. We travel anywhere in the UK.
Many of our clients have used the government's business link website for information on financial assistance with our courses. Some clients have received a grant of 75% towards the costs.
